The aldol is for compounds with alpha-hydrogens; they can enolise and attack another carbonyl. Cannizzaro is for those without alpha-hydrogens, like benzaldehyde, where one gets oxidised and another reduced. You check for those acidic alpha-hydrogens first—that's your key.
