Ah, that is because the curdling process removes much of the lactose, shari. My own stomach troubles with fresh milk, but I take my afternoon kanji with a spoon of old curd without any complaint. It reminds me of my granddaughter—she cannot touch milk, but she will happily finish the thick chaas her chechi prepares. These are gentler things, made for our bodies.
