Because our own fields grow rice and spices, not enough oilseeds like mustard or groundnut. So we pay foreign prices for palm oil, and my bhaji-paw stalls get squeezed. I see it every market day: the tanker delivering imported oil costs more than my local coconut did, so I fry less. To think, we grow so much food but cannot fry it in our own oil.
