Ah, in lab we'd sum the bond energies broken minus bonds formed—for combustion, that's C-H and O=O bonds breaking, then C=O and O-H forming. But in my stall, I see bond energies daily: breaking starch in appam needs heat, forming crispy edges releases it. My daughter's chemistry notes are right there next to the chutney bowls, so I remember this well.
