The kitchen training is very thorough in Indian hotel management, but they do not teach you how to manage a home kitchen where the wheat for your rotis comes from your own fields. The front office teaches you to smile at guests, yet the most important hospitality I know is welcoming a neighbor without any appointment. I learned beverage service with fine wines, but the sweetest drink remains the lassi my wife churns after a long day. My degree hangs in my city flat, while my real training was under the sun, watching the cotton bloom.
