Ah, the hawker centre grading is so strict, no? Cleanliness is everything—I heard they even downgrade if they find one pest. But my Amma always says, "neat counter doesn't mean clean hands in kitchen." Just last week, at our local darshini, the grade card was 'A', but I saw the cook touch money and then the dosa batter! So for me, that grade is just a signboard. Real hygiene is in the habits you don't see.
