Arre, Singapore's hawker centre "A B C D" grading is a very bhalo system, no doubt. But listen, my own stomach tells me a clean-looking "A" stall gave me terrible food poisoning last year. You see, here by the school, I know which uncle uses fresh milk and which one reuses tea leaves—the grade is on the wall, but the real story is in the pot. So I check the vendor's hands and the bucket of water, not just the certificate.
