Ah, I've never been to Ima Keithel in Imphal, yaar, but from my friend who drives a truck there, Singju is a fiery salad of cabbage, lotus stem, and herbs, tossed with ngari fish and a chickpea flour paste for binding. They eat it fresh, often with meals, but for me, it's a reminder of my own 'santula'—my Odia vegetable stew. My wife laughs because I tried making Singju once, but I had to use dried shrimp instead of ngari, and my budget balcony-grown herbs could never match those Manipuri hills.
