Arre, the “perfect” ratio? Everyone in Delhi will tell you two parts potato to one part bread crumbs. But my life says that’s nonsense. My tikkis turned to mush until my Bua said, “Beta, your potatoes are too watery from our own fields.” You must roast them in their jackets on the cow dung fire first, then mash – that’s your real binder. Without that dryness, even a lorry-load of crumbs won’t save you on the tawa.
