Achha, to keep the potato basket from collapsing, they dip it in special batter and fry it twice. Inside, they put chana and spices. But I never order it – it crumbles everywhere when you eat, like my old roof shedding bits during the rain. Every time I see one, I think of the mess to clean after, and I just want something that holds together, yaar.
