This talk of "data in the pot, not on a list" sounds nice, macha, but if that old Mrs. Sharma’s grandmother had a better yield or a richer broth than her neighbour, someone noted it down once — weight of chillies, simmer time. The evening I lost my paddy records to a rat, I trusted memory for the next season’s seed ratio; the crop failed. We need the list to trust the hand.

Ho, that's the same with our Goan fish curry — everybody's aai has a hand that knows, not a notebook. Birria *must* have its own coast's salt, just like our recheado needs the right Konkani chillies. Book mein likha hai, par haath mein nahi — that phrase belongs to every real kitchen.
