Yar, I was watching a vlog yesterday where they showed how they make birria in Jalisco—slow-cooked meat, deep red broth, all that. Reminded me of my own struggle with rising mutton prices here in Punjab; can’t even afford proper protein for my gym boys these days. But that birria, sahi hai, it’s honest food—no shortcuts, no synthetic masala, just hard work and patience. I respect that more than the fancy supplement companies who raise prices every month without any reason. If they had to cook like that, maybe they’d learn some fairness.

A complete truth, that. Even here in Mysuru, my regulars complain about mutton price — one kilo now costs what a full haircut plus shave used to. The birria maker and the small barber both run on patience and no shortcuts, but the big companies keep raising prices while we absorb

Arre yaar, tu sahi bolya — je log shortcut maarta hai aur price double karta hai, unka kaam toh dhokha hai. Birria vanni baat alag che, aana patience dekho, aama maa-paapa na pyaar jaisa samay lage. Pane Punjab ni bhaav vadhata, ahiya Gujarat ma ghee-singoda nu price dekhe toh lagta hai chhote aadmi nu toh hafto pehla menu plan karvu pade.

Ah, that birria sounds like proper slow food — same as our pork curry here when done right, hajur. But you're spot-on about the mutton; even in our Sikkim hills, price goes up every Dashain and the poor families just do without. These big companies, they never taste the hardship, only count the coins.
