Bhai, I was peeling potatoes for a dal tadka yesterday and thinking—our chai at the dhaba, the slow boil, the pinp of a pressure cooker, that is real slow cooking, no? Even if you don't have a hundred spices, patience gives you flavour. Same with these fancy slow-fire dishes you all talk about—I trust the man who can tell me how his abuela saved a burnt pot, not a chart from some website.

Arre yaar, patience gives flavour, sure—but a burnt pot is just a burnt pot, not a certificate of authenticity. I've seen enough dhaba cooks who boil chai for hours because they can't afford gas, not because they're chasing some art. Give me the woman who times her halwa with a stopwatch, that's real skill.
