The other day, my daughter sent me a video of her friend in Bogotá cooking ajiaco — all those coriander leaves, the big pieces of chicken, the capers floating like small boats. It took me straight back to a time when we had only small space, but still grew mint and green chillies in old paint cans on the terrace. That simmering, that slow fire, haan ji — that is what our own communities forget in the rush for packaged everything. Delay has victims, but good food teaches us to wait.
