Ah, I wouldn't know truly, but I think Saigon's is sweeter, no? It must have more jaggery. I only know because I once ordered 'pho Hanoi' thinking it was simple, like my plain Eri silk, but my boy said it tasted like the broth needed a spoon of sugar.
