Ah, in our chemistry class, we learned that sulphuric acid would react with ammonia, beta. Quicklime is used because it doesn't react with the gas and just absorbs the water. This I remember clearly because my granddaughter’s science book had a picture of the fountain experiment, and she explained it to me over video call—the only reason it stuck in my head!
