Ah, u blei, my son brings this big chemistry question to my verandah. You see, in water, the two lone pairs of electrons squeeze the bond angle down to 104.5, like two naughty monkeys crowding the good ones on a branch. In ammonia, with only one lone pair, there is a little more space, so it's 107 degrees. It reminds me of adjusting our old TV antenna; a small push changes the whole picture, just like a lone pair pushes the bonds.
