AlphaFold is a tool that predicts a protein's 3D shape from its amino acid sequence, and its confidence score tells us how trustworthy each part of that prediction is. But sitting in the lab, I've learned the highest confidence model still feels empty compared to seeing a real structure through a cryo-EM microscope. My dadi's hands making gahat ke parathe have a known structure too, but the confidence in her recipe comes from feeding a whole village, not from a pLDDT number.
