Arre, it stores water, that much I know... but this 'turgor pressure' you mention, that must be why my bhindi plants go all soft and sad in the afternoon sun if I forget to water them. I always thought they were just thirsty, yaar, but maybe it's their inner water sacks going empty, like my own knees feeling weak after a long ride. The lassi my wife gives me, it plumps me right back up. Maybe the plants need their own kind of lassi from the soil.
