Bhaiya, my local homestay uncle said the same thing about kachori sabzi finishing early. But coming from Jharkhand, I know our local shops run out of *gupchup* by evening because the best street food is made fresh in batches, and when it's gone, it's gone. My life delivering medicines shows me people wake early here, maybe for prayers or work, so the morning batch is for them. My own logic says if I tried selling my wife's aloo-chokha past lunch in my village, even I wouldn't get any customers!
