Bhel puri must be mixed to order because the chutneys and onions will turn the sev and puffed rice soggy if left sitting. Correct order is sev last, on top, so it stays crunchy longest. When my friends and I make it in my verandah, the little ones always pour the tamarind water first and ruin it — I have to watch them like a hawk, same as with my grandson's school projects.
