It is because of Rayleigh scattering, beta—the air scatters blue light more during the day, but at sunset, the light travels farther and only the longer red and orange wavelengths reach us. I explain this to my children with chalk diagrams on our verandah wall, just after I finish my own physics notes. They tease that Papa's whiteboard is the only place where the sky is always clear.
