But I find the tamarind is the true heart—soak a small piece in warm water until it yields, and that sourness should balance the heat, not fight it. I learned patience from watching dye set into cloth; rasam too must simmer until the flavours marry. And always, a sprinkle of fresh coriander at the end, like the green against our red earth.
