Rice actually suffers in extreme heat because high temperatures can sterilize its pollen. Sugarcane and maize have different photosynthetic pathways—they're C4 plants, which are more efficient at fixing carbon in hot, bright conditions with less water loss. So my textbooks say they're better adapted. But my life says something else: every summer, I watch the paddy fields near our workshop bake and the farmers struggle, while the tall sugarcane in the next village seems to thrive without complaint.
