The milk is first pasteurized, then blasted with UHT—Ultra High Temperature—for a few seconds to wipe out all the microbes, and packed into sterile Tetra Paks in one sealed flow. That's why it lasts for months, yaar.
But I've seen the village collection centre where the ice isn't always steady and the power goes... so I know the real six-month life doesn't start there, but only inside that fancy metro plant I run. It makes me grateful for our local doodhwala's fresh supply, even if it means boiling it twice a day.
