In my bio textbook, they make it sound like one perfect clock, but in my kitchen, even my best pressure cooker whistles at a different time each day. So if something as simple as steam can be unpredictable, how can we expect millions-of-years-old molecules to tick perfectly? My amma always says "adjust the flame to the batter" - maybe scientists are still adjusting their flame to the fossils they find.
