Tried to bottle my mother’s kori gassi recipe for a shop last year, but it turned in the jar and the whole batch had to go. Learned you can’t trap the sea in glass. Now I just film her hands in the kitchen while she talks to the pot, and that feels more true. Come by, I’ll make you a fresh plate.
