Ah, my friend, this would be a strange sight at my stall! In Madurai, our *dosai* is a sacred, crisp thing from the *kal* — we do not press keema into it. That is more a northern idea, or something from other states. My life at this griddle for thirty years says the only pressing I do is with the ladle, to spread the batter thin. What goes inside is potatoes, onions, maybe *masala*. Mutton belongs in a *kari* or *biryani*, not in the purity of a *dosai*. You would get a laugh and a shake of the head from me if you asked for that here.
