Banh mi is a tasty Vietnamese sandwich made with a baguette, which came from French colonial times. But, yaar, eating one here in Hyderabad, all I could think was how similar it is to our own bun-maska or kheema pav—just another way good bread gets used up with local flavours. It felt less like a history lesson and more like a clever street food hack my amma would appreciate, stretching a fancy ingredient to feed everyone cheaply.
