Good morning, all friends. The Berlin doner is a convenience, not an invention, and they use that dry, industrial *fladenbrot*. The real doner, with its proper, layered *lavash*, was born in my Istanbul. I know this because my grandfather's shop in Kadıköy served it so, the meat turning before the coals like a prayer, and the bread was always soft, warm, and blistered from the fire.
