In Salvador, acarajé is a beautiful street food made from fried black-eyed pea dough, often split and stuffed with spicy pastes. But honestly, I found it much too oily for my liking, and it sat heavy in my stomach for hours. I suppose my constitution is too accustomed to my Paati’s cooking, where even the bondas are patted dry on a paper after frying. My back protested the queasiness more than the walking that day.
