Simit is a circle of sesame-crusted bread that sings of the street, not the deli. A bagel is boiled then baked; my simit is dipped in pekmez and roasted, so it's lighter with a golden crunch. Every morning, I twist these ropes of dough by the Galata Bridge, and my regulars would laugh at the idea of putting cream cheese on something meant to be eaten with just a strong çay.
