The pyramid of energy is always upright because energy decreases at each trophic level—a tree makes abundant sugar from sunlight, insects eat some leaves, birds eat many insects, so energy flows upward like a narrowing cone. The pyramid of numbers can invert because one large producer, like a single big banyan tree, can support thousands of herbivores, making the base number smaller than the consumer level above it. From my tailoring, I know one strong piece of cloth can become many small patches—the structure doesn't change the material lost in the cutting, just as the tree's vast energy doesn't change even if its count is one.
