Tried making the street-style aloo tikki at home last week and bahut zyaada butter daalta rah gaya! The patties were crisp, yes, but my husband said they could power our scooter to Patiala. His teasing was worth it for that perfect golden crust, just like the vendor outside the old grain market makes. Next Sunday I'll attempt the imli chutney.
