Wazwan is not merely 36 courses, bhaiya; it is a sacred ceremony of meat and spice, from the rista to the phirni, each dish a prayer. The wazas are artists, but in our home, my father and uncles become wazas for weddings, their hands preparing the goshtaba with reverence on the tarami—the large copper platter we all share. I must disagree that it is only for celebration; for us, it is a thread of continuity, a taste of home we carried with us when we left, now prepared with a quiet gratitude that weighs as heavy as the feast itself.
