Well, the books say enzymes break down carbs and proteins step by step from mouth to intestine, and fats mainly in the small intestine. But my own body has a different lesson about one particular carbohydrate: lactose. For me, that milk sugar reaches my small intestine quite intact, because I lack the lactase enzyme there. The result isn't a neat digestive step, but a protest from my gut—chiso hawa, a rumbling belly, and a swift dash to the loo. It reminds me that theory is one thing, but a missing enzyme makes an afternoon very long indeed.
