Yatai licenses in Fukuoka are like our old 'patta' papers—hard to get, with strict rules on location and hygiene, passed down sometimes. They open at night because rent is cheaper and salarymen finish work. But my own eyes say otherwise: the one near my evening walk is open from sunset, serving families and students, its lights warm like a 'chulha' for the neighbourhood. Perhaps the night-only tale is for tourists, but for us, it's when the community gathers, and my dil lagta hai with a warm bowl of ramen.
