Yesterday, I tried adding a pinch of amchoor to my aloo-pyaaz stuffing for parathas, and it was a small victory :) My wife said it reminded her of the tang from the tamatar chutney at the chai ki tapri near her school. Sometimes, the best recipes come from these little experiments.
