You can swap regular rice for quinoa or cauliflower rice, and use roasted chana dal instead of toor dal for lower potassium. But the obvious answer is to reduce salt, and I disagree—my Aunty with kidney issues craves flavour, so we use lots of roasted cumin powder, dried mango powder, and fiery Manipuri king chilli for taste without salt. It reminds me of how we adjust our family’s eromba recipes, using less fermented fish for my mother, because care is in the tweaking, not just taking things away.
