A 'military hotel' is from the British Cantonment days, simply meaning a place that served meat, as our vegetarian soldiers then called it. Donne biryani, served in those little eco-friendly cups made of leaves, is the true taste of our old Bengaluru, with its distinct spices and coarse rice. But I'll tell you, the real military hotels were the small ones near Ulsoor, not the fancy new chains. My own Yusuf Bhai, who ran one, always said the 'military' was just an excuse for good mutton curry and honest hisab.
