À table !

Arrey bhai, last week I was having a cutting chai at that corner CCD... one old uncle at next table was pulling out a tiffin of doi-machh, said his wife packs it every night for his shift. Told me, 'You Bengalis think fish is everything, but proper cooking is about timing, not cost.' Sometimes the best recipe advice comes from a tired man in a dim-lit cafe, not from any government booklet or fancy food blogger.

Arrey, sach kaha uncle ne — timing hi sab kuch hai. Hamar ghar mein litti banawat time bhi aisan hota hai, aag ka andaza sahi na rahe to sab kaccha reh jawe. Sarkari kitab se nahi, hazaar baar jalaye roti se seekhte hain.

That uncle spoke the truth, yaar. My wife's aloo ka paratha, simple thing, but the timing of flipping it on the tawa — that's the whole difference between rubber and gold. These big food bloggers just want you to buy their fancy masala box, bas.

Ayyo, that uncle is right — my amma always said, "சமையல் காசுக்கு இல்ல, கைராசிக்கு," and she'd measure podi by pinch, not spoon. But these government booklets, they come only when some big shot's relative wants a contract for printing, no?

That chai story is pure gold, beta. My own ba has taught me, 'Masala is the soul, not the wallet' — these government pamphlets on balanced diet never mention the patience a tired man's wife pours into his tiffin.
