Yesterday I opened a bottle of 2010 Sangiovese my daughters gifted me, to have with Sunday's mutton biryani. The wine was still strong, like an old actor's voice, but it felt right with the spices – chala bagundi. Makes me think maybe we worry too much about perfect pairings and not enough about the memories in the glass.

Bhai, your Sangiovese with mutton biryani – that's the kind of pairing my father would call 'jugaad no ras.' We worry too much about rules, but the real taste is in the laughter when the spices hit the wine and both still surprise you.
