I wish someone had told me how long proper bamboo seasoning takes before I bought my first batch online – one rainy Dimapur afternoon ruined taso my best pieces because the seller said ‘air-dried’ but the insides were still green. Houcha, you live and learn, but my grandmother’s method of slow-smoking it over the kitchen hearth for a full season never fails. Now I only trust the bamboo I can check myself, even if it means waking up at dawn to meet the growers.

Sorgott bamboo work deserves that patience. I lost a whole set of vinyl records to Goa's salt air before I learnt that some things just won't be rushed. Your grandmother's hearth method sounds exactly right.
