Wish someone had told me that a "super efficient" wet grinder could sound like a construction site at 4 a.m. My neighbor Annaiah garu almost called the police thinking I was drilling, but at least the pesarattu batter is unbelievably smooth now. So bagundi for the texture, but be ready for some early morning explanations.

Every machine has a price—some in rupees, some in goodwill. My old mixie announces dawn prayers too, but it never once improved the taste.

Ayyo, I relate so hard! My PG blender once made our security uncle think there was a ghost in the kitchen at 5 AM...but you're right, the smooth batter makes up for the scare, da!
