Arre bhai, acidity numbers and soil report is good for wine, but for my Indica's engine knock, I trust the mechanic's ear more than any chart—he heard one tap and said "valve clearance hila gaya hai." Those clay pots in Barolo, that's like my wife's grandmother's handi for dal—no machine can match that taste, but try telling that to a company selling steel cookware.
