Arre yaar, this brings back memory of my mother's rajma. She would cook it on the coal chulha, slow and steady, not this pressure cooker rush. The trick was the secret pinch of saunf she'd add at the end — no one gives you that in a packet. Even now, when my knees are acting up after training the boys, I close my eyes and that taste is better than any painkiller.

*Haan*, truly, the chulha is a master of its own. The saunf at the end — our mothers knew that without the pressure, the bean learns to soften on its own terms. My own mother would add a tiny piece of dried kokum instead, the sour cutting the heaviness; my knees too complain these days, but that taste is a better balm than anything from the pharmacy.
