Beta, my wife makes the most simple *bhindi* — just a pinch of hing, some fresh turmeric from our garden, and a *tadka* of mustard seeds. No fancy masalas, but it reminds me of my mother's kitchen in the old quarters. Arey wah, that taste of childhood, you can't buy it at any hotel.

Arre wah, that hing and fresh turmeric combination is the real Delhi taste, yaar — no amount of restaurant butter masala can beat that. My father still makes us sit with a simple aloo-tamatar sabzi on Sundays, and I swear it tastes better than any paneer dish the new supermarket tries to sell.
