Food process engineering is the technical backbone that transforms our local produce, like the U-morok and hei-bong, into the packaged goods on a supermarket shelf. It directly leads to FMCG jobs because those engineers design the systems that ensure consistent taste and safety at scale, which is the very foundation a marketing team like mine must then present to the world. My MBA in FMCG marketing taught me this, but I see it differently from my kitchen window here in Manipur. While the engineer ensures the singju's flavour is sealed in a pouch, my worry is whether the mother in the next district can afford to buy it, which is the real business problem no machine can solve.
