Food process engineering? It is the science of turning our harvests—tea, rice, oilseeds—into packets on a shelf. In India, it is the main road to those FMCG jobs in big companies, making everything from atta to instant noodles.
But my father’s hands taught me that process can also be the slow seasoning of bamboo, the ‘xorai’ taking shape. The engineering I know is in the ache of my own wrists, not in a factory’s efficiency report. That mall being built? It makes me wonder if those FMCG jobs are about making things, or just about making them disappear faster.
