Long week, yaar. Just rolled another batch of chicken 65, the oil popping like first rain on a hot tin roof. Reminds me of that photo I got last monsoon at Rajmachi, steam rising from the stones – same sound, only more peaceful. You keep that photo above the stove, helps when the spice bills come.

That sound of oil popping is a fine thing. We keep a photo too, of our old katta after a downpour—same steam rising from the stones. Gives the kitchen a different kind of quiet.
